The U.S. Food and Drug Administration (FDA) stated that hands should be washed before making food and putting on gloves to make, handle, or move food. The FDA also states a person should wash his/her hands after eating, coughing, sneezing, using tobacco, drinking, using a tissue, using equipment, touching any part of the body, and preparing raw animal products.
The Environmental Health Specialists Network (EHS-Net) did a study and found that during a one-hour-period food workers did nine activities where they should have washed their hands; however, the workers only washed their hands for 27% of these activities. The EHS-Net collected this data from 321 restaurants in many states. The study also showed that workers were more likely to wash their hands at the proper times when they weren’t wearing gloves as opposed to wearing gloves.
If you break down the activities, the activity where the most handwashing occurred was before preparing food, which was at 41 percent. The activity where the least amount of handwashing occurred was after a worker touched his/her body, which was at 10 percent.
Overall, the study concluded that workers either do not know when to wash their hands or they are just choosing not to wash their hands. The study also concluded that people tend to wash their hands less when gloves are being used.
Gloves and hand washing are both forms of hygiene and must be used together to prevent the transmission of bacteria and diseases. Gloves can still transfer bacteria, which is why hands must always be washed before and immediately after usage.
